Can I just say that I really love nice people? Like those strangers who just go out of their way to help make your day, even in the smallest way. I’m such a fan of pay-it-forwards, random acts of kindness, surprise and delights, whatever you like to call them, because they have such an impact on someone for a minimal amount of effort.
When I was at the grocery store gathering ingredients for this recipe I was in a bit of a daze. My post-barre pre-coffee brain was thinking of my to-do list for the week, recipe ideas, the blog to-do list, as well as planning my outfit for work – needless to say I was not paying close attention to fine print on the shelf labels listing that latest price drops and deals.
As I’m ringing my groceries in at the self check out, the sweetest Co-op employee there ever was stops me and lets me know that the giant bag of frozen mangos I was loading into my bag was on special – buy one get one free. She offered to watch my groceries while I scooted back to the frozen fruit aisle and grabbed another bag. She definitely didn’t need to do that for me. But she did. And it made my day. Plus now I have mangoes for dayssss which means I can make this tropical mango smoothie bowl for breakfast every darn day if I want to. And I just might do that because it’s basically like eating mango sorbet for breakfast. Count. Me. IN.
Moral of the story is that sometimes I’m a hot mess. Especially before my morning cup of coffee. But it’s those times when you really appreciate the kindness of others. So thank you, kind Co-op employee. This tropical mango smoothie bowl is dedicated to you.
- ½ cup light coconut milk
- ½ cup frozen mango
- ½ cup frozen peaches
- ½ frozen banana
- 1 scoop vanilla protein powder
- Add all ingredients to a high speed blender and blend until creamy and smooth.
- Top with fresh pineapple, coconut, hemp seeds, and your other favourite toppings!
