Lighten up lunchtime with this delicious chickpea and veggie spring salad with avocado dill dressing that will put a spring in your step – pun fully intended.
I have mad spring fever right now. I am so excited for warmer weather and all of the fun outdoor activities that come with it! I went out for drinks with friends a few nights ago and sat out on the patio in the sunshine and I knew that was the end of it. Bye bye winter blues, from now on you can find me in flip flops and sunglasses, regardless of whether or not the weather decides to cooperate with me. My college roommate and good friend used to always say “dress for the weather you want and not the weather we’re having”. A take on the whole “dress for the job you want” saying but infinitely more hilarious when she would walk out of the house in flats when it was 2 degrees and pouring rain. Just one of the reasons why I love her.
One of the things I love about spring is that I crave lighter, healthier, fresh food! Pile on the veggies, yes puh-lease! This salad does just that – it’s light, refreshing, and crisp. And don’t even get me started on the dressing. It’s so tangy and creamy! Whenever I make it, I always plan extras so that I have dressing in the fridge to use on every bowl and salad recipe I can think of. It’s that good.
You can throw this salad together in under 20 minutes, and you can customize it however you want – add your favourite vegetables, or even sprinkle in some nuts for some different flavour. The possibilities are endless, so get creative and impress your friends.
- 1 can chickpeas, rinsed and drained
- 1 bell pepper, chopped
- 1 cup grape tomatoes, sliced in half
- 1 cup cucumber, chopped
- 3 green onions, diced
- ¼ cup extra virgin olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. grainy old fashioned mustard
- 1 green onion, chopped
- ¼ ripe avocado
- 1 Tbsp. chopped fresh dill
- ½ Tbsp. minced garlic
- Combine all dressing ingredients in a high speed blender. Blend until smooth.
- While dressing is blending, combine salad ingredients in a large bowl.
- Pour dressing over salad and toss to combine. Top with fresh dill for garnish.
